Thankful Thursday

 Wanted to jot a quick entry before I gird my loins to tackle the kitchen and tidy up before my massage tonight. My friend Katy's coming over and I'm gonna work some magic on her in exchange for some new MK makeup/compact and a mask for my face. I am trying to take better care of my skin, so thought a once a month mask would be a nice thing. Hopefully it'll get rid of my botox-screaming area and make me look like pre-kid Courtney. HA. As if.

We had a pretty decent day today, despite once again waking up and feeling like I wanted to punch someone in the face. Darn the PMS for reals. (Adding all-natural pms supplements to my New Year's goal list). Got up and had some things somewhat ready bc this morning was Mother's Touch, and the recipe exchange at that, so I had to be up and ready w/ meal and kids in hand and at the church by 10 am!
This is what I took: Muffin Tin Meatloaf...looks gross, but is SO darn good.
Evan, alone, ate  4 and 1/2 of these badboys the other night! (Recipe Below)

Needless to say, got there 5 min late. There were 2 full tables of food, so we tried just about everything, like a little nibble, of each thing, except for the desserts. Me and Ash made a pact to steer clear in honor of our goals!!! The food was great and collected many new recipes to fill up my recipe box and give me some new ideas for meals for the New Year!! So glad! Had fun just getting out and being w/out the kids and talking to some grown ups! :)

Came home and Randall showed up & decided to take M with him to work, since E wasn't done w/ school. After M was gone we sat down and did our school.( Today we finished our 75th lesson in SCHOOL TODAY! I am so thankful we have made it this far!!! We are about 5 days behind, but nothing too big, and with how easy we've taken it this year, I'm just so glad and proud of my son, and heck, even myself:) I didn't know if it'd be my thang or not! )Takes SOooo much longer in the afternoons bc he is so worn out. Lil guy still can't hang w/ the big dogs. He did great though, and we broke up ALL the seatwork (seems like a ton lately in Abeka:/ ) with some fun phonics board games, coloring, and reading a book. He then volunteered to do his last pg of writing, even though he's said before that he didn't want to do it.

 And I hafta shout w/ joy over his "new" attitude!!! For the past month, we have been battling it out and I've been so worn, frazzled, depressed and just OVER IT with his defiant attitude, etc. Made a new chart for the pantry that says "I said YES MA'AM" and has 30 empty boxes in it. At the end I drew a pic of a train. If he fills all the boxes w/ a smiley face sticker, he gets a train from Walmart. So, he's happily obeyed me every time I've asked him to do anything today. He hasn't necessarily said "yes ma'am", but just doing what I ask w/out yelling NO, blah blah blah after, I'm thrilled. He has 2 stickers. Hopefully he'll fill it up in a week or two. Anything to get the ball rolling. I'm tired of the negative and want him to be excited about being obedient, helpful and respectful. You can't beat that into a kid.

Thought I'd post a few pics from Liz's visit over New Years. She, Brad and the girls came in Thurs and left Tues in the afternoon. It's always so hard to see her go. I miss her living here so much. And, it's nice to have girls in the house:)) Evens out all the testosterone!

This is how I made Liz's bed in preparation for her arrival. She is a BIG Team Jacob fan so I had to put my Edward fleece
throw as her blankie and then left some "vampire blood" B&BW hand sanitizer for her too. hhaaa. She was like, what is this garbage?!?!?! hhaaa. Hilarious. And, I swear I saw her snuggled up close in the blankie a couple diff times. Deep down, she knows the truth:)

Muffin Tin Meatloaf:
Put all in Kitchenaid and mix well, or mix well w/ your hands!:
*1 lb. ground beef ==LEAN!! like 93/7 or less!
*1 egg
*3/4 cup Milk
*1 cup shredded cheese (i used mont jack/cheddar)
*1/2 cup oatmeal (reg or quick oats both work)
*1/2 tsp minced onion or onion powder
*3/4 tsp salt


TOPPING:
*1/2 cup brown sugar (i use light brn sugar)
*1 and 1/2 tsp mustard
*2/3 cup ketchup
Mix all in bowl well and put in micro for 20 seconds. I wisk mine to make sure it's really mixed and yummy


Put meat mixture in Pam-sprayed muffin tins (1 recipe makes 12 little "loaves") . Make sure to leave enough room on top for topping. Top each w/ generous amt of topping. Cook for 30 min at 350 degrees. Will be a bit greasy on bottom, which is why it's so important to use VERY lean meat! INSANE! this is so good and so darn easy. Great for a quick dinner or taking a sick person a meal!
