Decided to try out making apple pie filling and freezing it so I could just pop it outta the freezer and make a quick pie for Thanksgiving, Bunco night, or even taking a meal to someone. Katy and Alexis came over to help me peel, cut and boil, while Molly played trains with the boys. It was really fun and went so fast sitting there shootin' the breeze as we peeled and cut, filling up our big stainless mixing bowls w/ the peels and fresh cut apples. I think if ppl baked and cooked more together, there'd be less hate in this world;) Good think Katy was here bc it didn't even cross my mind that 18 cups of apples and 10 cups of water couldn't fit into one little stock pot!!! Thank God I had 2!!
Got the recipe off of this website: http://www.piefilling.net/makeahead-apple-pie-filling/article/341327383522760564571270653553 , and it looked pretty easy. Next time I want to do a lower sugar one...4 and 1/2 cups is TOO much for 5 pies! oh word! I saw another recipe where you use apple juice to boil them in instead of water. Pretty cool!
