So, think I'll start thinking ahead more in this new year and plan my weekly menu ahead of time.
Here's a few things on my list for the week:
Breakfast:
*Ham n Cheese scrambled eggs
*Sweet potato French toast
*homemade waffles
*Cereal
Lunch:
*Mini english muffin pizzas (recipe below)
*S'wiches w/ pretzels and fresh fruit
*Mac n cheese
*leftovers from dinner
Dinner:
*Sweet Tater and Black Bean Chili
*Zesty Pulled BBQ slowcooker
*Tomato Pie
*Italian Turkey burgers w/ baked fries (recipe below)
*Slowcooker Chicken tacos w/ peach salsa & cilantro
*Slowcooker Wild Rice Surprise (not sure yet, but I have some organic Minnesota wild rice I need to use up!)
Recipes:
ENGLISH MUFFIN PIZZAS
~Pkg english muffins--any kind you like. I try to use whole grain ones
~small jar spaghetti sauce of your choice
~Italian seasoning blend
~Shredded cheese of your choice. (I use either mont. jack/cheddar blend or mozzerella)
~Mini pepperoni or any other desired toppings (optional)
Slice english muffins open. Put on cookie sheet. Top each w/ spaghetti sauce and spread around to coat the top. Sprinkle Italian seasoning on top of sauce. Top w/ Cheese and any other desired toppings.
Cook for 10 min. at 350 degrees...maybe a smidge longer if you use Mozerella. Great lunch for the kids. Keep in mind, my kids each eat about 3 mini pizzas, so make sure to make enough;)!
ITALIAN TURKEY BURGERS
~pkg of lean ground turkey. (I get the 1.25 lb pkg)
~Can petite diced tomatoes
~Shredded mont. jack/cheddar cheese
~Garlic salt to taste
~Cheese slices(optional)
Put ground turkey in mixing bowl. Put in about 1 cup or so of cheese>I just guess at all these measurements. Drain can of tomatoes and put in about 1/2 can. Sprinkle in garlic salt to taste. Mix all very good, like meatloaf. Shape into little hamburger patties and throw on the George Foreman grill. When meat is cooked, add a 1/2 cheese slice and let melt before removing from grill. We put burgers on whole wheat bread, instead of buns. You could prob'ly put in a pan sprayed w/ Pam and cook on the stovetop. Makes about 7-8 burgers. SO Juicy and delicious!!
